Colombian Chicken Legs and Cucumber Sweet Onion Salad

I’ll be honest with you, I really don’t know a lot about Colombian cuisine. I’m sure it’s absolutely wonderful, and very distinctive, but I did not put in the time and background research to confirm that this recipe was “authentically” Colombian. What I do know is that all of you read the word Colombian in Gloria’s accent.

slapthechickenWell after making this recipe I can happily say that this chicken is my second favourite thing to come out of Colombia after Sophia Vergara, (but before Shakira).



Some notes;

Don’t be worried when you put the chicken into the oven (like I was) because it looked like this;

Green is a totally acceptable colour going into this recipe so you don’t need to worry it’s not going to turn out like this…

…because it does work out.

This salad is actually really nice and light. The dressing gives the cucumbers enough flavour to not be completely boring, and the onions are mild and sliced thinly enough to not overpower everything else.



8 chicken drumsticks, skin on
Cooking spray
4 green onions, chopped
4 cloves garlic
1 medium chopped white onion
1/4 cup fresh cilantro
3/4 tablespoon ground thyme
3/4 tablespoon paprika
3/4 tablespoon ground cumin
Salt and pepper
5 teaspoons white vinegar


1. In a food processor, place the green onions, garlic, onion, cilantro, thyme, vinegar, cumin, paprika, salt and pepper and process to a paste. It will kind of look like chunky salsa verde.
2. Place the chicken in a Ziploc bag and add the marinade to cover the chicken evenly. Refrigerate the chicken overnight.
3. Position an oven rack in the center of the oven and heat the broiler to high. Cover a baking sheet with foil and coat with cooking spray.
4. Place the chicken legs on the baking sheet. Broil for about 10 minutes and turn the legs one time and cook for 12 to 15 minutes more or until the chicken is cooked and the skin is browned. Let it rest for 5 minutes and transfer to a serving plate.

2 English cucumbers, halved lengthwise and thinly sliced on the diagonal
1 Vidalia onion, halved and thinly sliced
1/2 cup fresh dill, coarsely chopped
3 tablespoons olive oil
3 tablespoons fresh lemon juice
2 tablespoons white-wine vinegar
Coarse salt and ground pepper


1. Prepare vegetables and herbs as described.
2. In a large bowl, toss together cucumbers, onion, dill, oil, lemon juice, and vinegar; season with salt and pepper.
